Today’s recipe: Crispy Lady’s fingers)

400gm lady’s fingers (okra)
3tbsp gram flour
2tbsp rice flour
½tsp turmeric powder
1tsp red chilli powder
2tsp coriander powder
1tsp garam masala
1tsp dried mango powder (amchur)
1tsp chaat masala
Salt, to taste
A pinch of asafoetida (hing)
Wash and pat dry the lady’s fingers till they are completely dry. Cut of the tips and stems and slit each into four pieces lengthwise. Sprinkle the turmeric, red chilli powder, coriander powder, garam masala, mango powder, chaat masala, salt and asafoetida, and toss well. Then, add the gram flour and rice flour and toss well to coat evenly. Heat about 2tbsp of oil in a shallow pan and fry the seasoned lady’s fingers in batches. More oil may be added between batches. Remove each batch when crispy and golden brown. Serve warm.
