5-6 medium sized crabs – cleaned

2 tomatoes – chopped

1onion – sliced

1tbsp ginger-garlic paste

1tbsp tomato paste

2-3 cloves of garlic

1tsp red chilli powder

1tsp coriander powder

½tsp turmeric powder

½tsp garam masala

2-3 green chillies – slit

100gm butter

Juice of half lemon

Salt, to taste

2-3 sprigs of coriander leaves – chopped

Clean the crabs well – remove the main shell and discard, and separate the body and clawed legs. Season the crabs with a little salt and turmeric, and steam in a pan half full of water for about 5 minutes. Set aside.

Now in another large pan or wok, heat one third quantity of the butter and saute the onions. When onions are translucent, crush the garlic cloves on a cutting board and add. Then add the ginger-garlic paste and all the spice powders and fry for a minute. Now add the tomatoes, tomato paste, green chillies, lemon juice, salt, and half of the remaining butter, and cook on medium flame, covered, for 2 minutes. Add half cup of the stock from the steamed crabs, mix well and simmer for 3-4 minutes. Then add the steamed crabs and the last portion of butter, toss well, cover and simmer for five minutes. Remove from fire and garnish with chopped coriander. Serve hot with steamed rice or rotis.
