Today’s recipe: Mexican Mango Salad)

1 large mango – any variety, chopped to chunks

1 capsicum – chopped

1 large tomato – chopped (or 8-10 cherry tomatoes – halved)

1 red onion – chopped

1 cup sweet corn – steamed

1 can black beans – drained and rinsed

2tbsp chopped cilantro or coriander

2tbsp olive oil

juice of one lemon

½tsp  roasted cumin powder

A pinch of chilli flakes

Salt, to taste

½tsp freshly cracked black pepper

1tsp soya sauce or any salad dressing


In a salad bowl, add all the salad ingredients, except black beans. Drizzle with lime juice and olive oil, and toss well. Sprinkle salt, cumin powder, chilli flakes, cracked black pepper and toss again. Refrigerate for 15-20 minutes. Just before serving, add black beans, cilantro/coriander, and soya sauce/salad dressing. Toss and serve. Optional, garish with any favourite crispies.
