Today’s recipe: Luqaimat (Omani dumplings)

For the dumplings

1 cup all purpose flour

1tsp sugar

½tsp cardamom powder

Few strands of saffron

3/4 cup of warm water

1tsp dry yeast

Oil for deep frying


For syrup mix

2 cups of sugar

1½ cups of water

1tsp lemon juice

Few strands of saffron



To make the dumplings, in a large bowl, add sugar, yeast and 1/4 cup of water. Let it rest for sometime to react. After 5-10 minutes, to this, add the flour, cardamom powder, saffron and half cup of water, and mix well. Cover the bowl and let it double the size in a warm place. In a pan add oil for deep frying. When hot, take a spoon of batter and drop in the oil. It will rise to the surface and keep bobbing. Move it with a spoon to cook evenly on all sides. Remove it when light brown. Now, add a batch of dumplings in the same way and fry evenly.

For the syrup, mix all ingredients and boil on medium flame for five minutes.   Remove and keep warm. Transfer each batch of dumplings to the sugar syrup to coat well, and remove with a slotted spatula to another tray. Enjoy warm.
